New Danbury eatery hopes to be part of downtown renaissance

Photo: Lisa Weir / The News-Times FreelanceDANBURY -- A new restaurant that combines the city's rich history with an eclectic mix of American cuisine is vying to be part of the downtown renaissance.
The Mad Hatter is scheduled to open Friday on Ives Street.
Alice and Roger Manter , longtime Danbury residents who recently moved back to the city, decided to open the restaurant after learning about efforts to revitalize CityCenter.
"We wanted to create something that will make people interested in Danbury again and its history," said Alice Manter , who ran a successful pizza restaurant in Florida before returning to the city with her husband this spring.
"We are delighted to be a part of the city's renaissance movement and want to make the Mad Hatter a community and family place, where friends (and) neighbors talk and business is done."
The restaurant takes is name from the Mad Hatter character in "Alice in Wonderland," and is a nod to Danbury's industrial hat-making tradition.
The walls of the restaurant are adorned with photos of the city's past, including the cobblestone road that was Main Street in the 1920s.
The Manters worked with volunteers at the Danbury Museum and Historical Society to have photographs from the museum's archives reproduced.
The couple also commissioned their son and daughter to create an replica of the mural that decorated the tap room of the former Hotel Green on Main Street.
The restaurant boasts a Cordon Bleu-trained chef and culinary offerings including herb-crusted baby lamb chops, pan-seared white fish with a mango salsa and "Grandma's" six-layered meat lasagna.
The eatery also offers a host of sandwiches choices as well as a hamburger menu that includes burgers named The Stetson, The Top Hat and The Derby Club.
Chris dos Santos, a professional bartender who has been nicknamed "The Brazilian Tom Cruise " for his skills behind the bar, has also created a host of unique drinks including the Electric Kurant, which earned him the title of Iron Bartender during a competition held in Stamford in 2007.
"Every layer of the drink has a different flavor," said dos Santos, who is hoping to bring the Iron Bartender competition to Danbury.

Your model is really too old and tattooed for the Alice in Wonderland theme, but if she pays, I say do what ever she wants. Likewise, if it is just for fun then why not try anything - who knows, it might work against all expectations.
